Hearty and rustic, rye has an intense taste that can be overpowering if it's not complemented with other stronger flavors. This versatile grain can be used in beer, whiskey, vodka and of course bread and sourdough!  This recipe uses a light rye, lower in gluten than normal flour.

Caraway seeds are a very popular addition to rye bread, especially in the US.  They are used as a spice and are used to boost the flavour of the bread.
